O&H Danish Bakery: Racine Kringle and Danish Pastry Catalog

O&H Danish Bakery is a family bakery in Racine, Wisconsin. Christian Olesen learned the baking trade over 25 years. In May 1949 he and a partner opened their own bakery and named it O&H Bakery. Racine came to be called "the most Danish city in America," with 10% of all Danes in the USA. The family is now in its fourth generation of bakers.

Christian's son Ray and Ray's wife Myrna bought the business in 1963. In 1972 Ray moved the bakery to a larger location on Douglas Avenue, and a second store opened at 4006 Durand Avenue in 1982. Between 1972 and 1982, Ray and Myrna began sending Kringle by mail. That mail-order trade now runs through https://ohdanishbakery.com. The third generation of Olesens took over after 1982. According to the bakery's contact page, Ray and Myrna taught the current owners the importance of customer service.

Kringle leads the O&H Danish Bakery catalog. Racine customers asked for more filling in their pastries, Kringle most of all, so Racine bakers gave Kringle a new oval shape. O&H repeats its dough process over three consecutive days to make a 36-layer pastry dough. In 2013 Wisconsin made Kringle its official state pastry.
